The Holiday Drink – How to Make It

We present a simplified take on a cocktail found on a new cocktail list. Designed as a batch prepared mix that's loaded with the flavours of the festive period, rendering it excellent for a celebration. Save the extra citrus syrup you can use for morning drinks, puddings, or for additional servings of the drink.

The Bikini Cocktail

Serves 10 guests

Ingredients for the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (produces 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Combine the listed items into a saucepan, heat until it reaches a simmer, mixing to dissolve. Then, turn off the heat and leave to cool down entirely. Decant into an sterilised bottle, seal and refrigerate it in the fridge, it can be stored for about four weeks.

To make Premix: Combine all the spirits and syrup into a big jug, let it rest for an hour, then filter it , ideally through muslin, making it perfectly clear.

To serve: Pour 85ml from the batch mix to a stirring glass containing ice, and stir carefully for a minute until cold. Filter into an frosted cocktail glass or similar, garnish with the cranberries and complete it using a quick spritz with the mandarin essence above the glass.
